Visa Infinite takes Malaysian diners beyond the menu with two chef-led culinary experiences

 

VISA Infinite cardholders can explore Malaysia’s culinary heritage through two limited-seat dining experiences that take them beyond the restaurant table and into the ingredients, traditions and stories behind the food.

The experiences, held at Bar.Kar and Chipta 11A, are part of Visa’s Infinite Tastes: Beyond the Menu, a culinary programme offering Visa Infinite, Visa Infinite Privilege and Visa Infinite Private cardholders access to chef-led experiences across Asia Pacific.

In Malaysia, the programme features two distinct culinary journeys: The Roots of Fire & Water at Bar.Kar on Nov 8 and The Canvas of Origins at Chipta 11A on Dec 5.

The experiences are designed to give diners greater insight into the people, ingredients and cultural traditions that shape Malaysian cuisine, including indigenous produce, fermentation techniques, open-fire cooking and regional culinary practices.

“Malaysia’s culinary identity is shaped not only by its diversity of flavours, but also by the people, places and traditions behind them,” said Jason Phua, Head of Clients, Visa Malaysia.

“Through Infinite Tastes: Beyond the Menu, we are collaborating with leading culinary talents across the country to create distinctly Malaysian dining experiences that offer cardholders a deeper connection to our culture, heritage and culinary influences,” he said.

Bar.Kar explores jungle, sea and fire

Chef Lee Zhe Xi will lead The Roots of Fire & Water at Bar.Kar on Nov 8, taking guests through three themes: Jungle, Sea and Fire.

The experience will explore Malaysia’s culinary landscapes through regional ingredients, open-flame cooking and Bar.Kar’s smoke-driven techniques.

The menu will feature wild mushrooms and herbal ulam sourced from across Malaysia, followed by seafood inspired by coastal communities. The final course will focus on bamboo and claypot cooking over fire.

Guests will also hear from farmers and foragers about the origins, traditions and techniques behind the ingredients used in the experience.

“Great food begins with respect for the people and places that make it possible,” said Lee, founder of Bar.Kar and Feast Dining Group.

“Through this experience, I invite guests to explore Malaysia with us, from jungle greens and smoked seafood to fire and claypot cooking, alongside the producers who make these ingredients extraordinary,” he said.

Regional beverages including tuak rice wine, toddy and house brews will accompany the experience.

Chipta 11A explores East Malaysian heritage

At Chipta 11A, Chef Jack Weldie and Diane Ong will present The Canvas of Origins on Dec 5, focusing on East Malaysian culinary heritage.

The experience draws on Weldie’s Kadazan-Dusun heritage and will introduce guests to indigenous herbs, wild produce, fermentation cultures and other ingredients from East Malaysia.

Guests will encounter ingredients in their raw forms and learn about traditional rice fermentation practices, including the preparation of tapai and tuak.

The experience will culminate in a one-night-only tasting menu that reinterprets East Malaysian flavours through a contemporary approach.

Weldie and Ong will also share the personal stories and cultural traditions behind the dishes.

“This experience is about returning to where it all begins: the ingredients, the land and the stories behind them,” said Weldie, co-founder and executive chef of Chipta 11A.

“Together with Diane, we want to share not only how we cook, but why we cook this way and the traditions that continue to inspire us,” he said.

Limited places available

Reservations are open for a limited number of places across both experiences.

Eligible Visa Infinite, Visa Infinite Privilege and Visa Infinite Private cardholders can check availability and make reservations through Infinite Tastes: Beyond the Menu.
